Christmas recipes

Hi guys, so sorry these recipes are coming late but hey! there are twelve days of Christmas so who says you have to have all the good stuff on Christmas day. So please try them out and let me know how it goes. Please do take a picture too.

#1 Chin chin

Yea, I know you are saying that chin chin is same old, same old but trust me, this is different, my chin chin is legendary.

Ingredients:

2kg plain flour.

500g sugar.

1/2 teaspoon salt.

2 nutmeg (grated).

600g margarine.

2 eggs.

1 tin of evaporated milk.

Water.

Vegetable oil.

Procedure:

-Mix all dry ingredients together.

-Rub in the margarine and mix till the texture of bread crumbs.

-Beat the egg, mix with the milk then make a well in the centre of the mixture and pour in the liquid.

-Mix well, add a little water and mix till the dough doesn’t stick to your fingers.

-Roll out, cut into uniform cubes and fry in the vegetable oil till golden brown.

#2 Caramel zobo

Ingredients:

1 heaped cup of zobo flowers.

1 tablespoon of ground cloves.

1 medium sized pineapple.

Sugar (add to taste).

Water.

Kiwi.

Procedure:

-Rinse and put zobo in the pot.

-Peel and grate the pineapple. Put this in addition to the cloves in the pot.

-Add enough water to cover the ingredients and then boil for 15 minutes.

-Strain and set aside.

-Caramelize sugar in a heavy sauce pan till just golden brown.

-Add water to the caramel, stir well and add to the strained zobo.

-Mix well, taste and add more water or caramel as needed.

-Serve chilled in cups crowned with kiwi slices.

Warning!

Don’t touch or taste the caramel, it’s like molten plastic!

#3 Tropical Cocktail

Bringing home the taste of calypso.

Ingredients:

Baileys.

Banana.

Coconut milk.

Sugar (optional).

Procedure:

-Measurement is free style.

-Combine the baileys, coconut milk and banana in a blender and blend until smooth and creamy.

-Sweeten to taste if desired.

-Serve chilled in a sundae glass and accessorize to make it pretty.

#4 Puff puff

Ingredients:

1kg plain flour.

350g of plain sugar.

2 tablespoons of yeast.

Water.

2 teaspoons of banana essence.

Vegetable oil.

Cinnamon sugar.

Procedure:

-Combine all dry ingredients and mix well.

-Add enough water till the mixture can form a smooth ball in your hand.

-Add the flavoring and mix well.

-Leave in a warm place to rise for 2 hours or doubled in bulk.

-Fry in hot vegetable oil until golden brown.

-While hot sprinkle with cinnamon sugar.

Bon appetit.

Cinnamon sugar: This is made by simply mixing cinnamon with sugar.

#5 Fruit salsa

Don’t forget to eat fruits which will help digest all the food you’ll be eating this season. Here’s my suggestion which is a salsa of 3, you can use any 3 fruits for yours. Remember to try something new.

Ingredients:

Pineapple cubes

Kiwi slices

Strawberry slices.

Procedure:

-Combine all ingredients.

-Spoon into cute bowls and place in the fridge to get cold until ready to serve.
